Yoghurt is a staple of my diet. Breakfast, dessert, when I just need a little something – I often turn to a trusty bowl of Greek(-style) yog, a few broken nuts and a drizzle of good honey. So I was delighted when the lovely guys at Esja agreed to send me some samples of their Icelandic-style Skyr yoghurt.
Skyr’s taken off in the past few years – most supermarkets now stock a brand of Skyr made by a large dairy co-op based in Denmark. You’d know it if you saw it. What’s different (and brilliant) about Esja is that the people behind it prioritise the sourcing of their milk. They properly care. It’s gotta be from the UK, it’s gotta be organic.
Esja Skyr is thick and delicious. With a consistency not dissimilar to fromage frais, it’s the perfect accompaniment to morning granola (check out my new recipes for #WakeUpToOrganic here). I’m generally a ‘natural’ girl when it comes to yoghurt but the taste of Esja’s flavoured varieties (vanilla, mango and strawberry) was so subtle that I can get behind them.
As well as gobbling up my Esja Skyr samples straight from the tub, I also chucked some into a morning smoothie. The results were, predictably, lovely.
Ingredients (makes enough smoothie for one big glass)
- 200g Esja Skyr strawberry
- 1 banana
- 20g toasted coconut flakes
- 20g oats
- 20g pumpkin seeds
- 2 tbsp crunchy peanut butter
- A handful of seasonal berries (I used raspberries and blackberries)
- Blitz all the ingredients using a smoothie maker or hand blender. Easy.
- If you want to thin it out a little, add a few splashes of milk until you get the consistency you want.
